THE FAMILY BEAN
Makes about 12 cocktails
1.5 ounces Smuggling Nun Irish Poitín<br
.5 ounce vanilla-fig simple syrup (recipe below)
2 dashes orange bitters
4 ounces tonic
Vanilla-Fig Simple Syrup (about 6 ounces)
7 figs (fresh), de-stemmed and halved
.5 cup sugar
.5 cup water
1 teaspoon vanilla bean paste
For the syrup: add all ingredients to a saucepan and bring to a boil over medium-high heat. Reduce to medium-low and cook, stirring frequently, for about 7 minutes or until figs break down. Cool and strain with fine mesh. Keep in fridge up to one week.
Assemble one cocktail: Pour all liquid but tonic into an ice filled shaker. Strain into a pretty glass that has some ice (or an oversized cube) in it and top with tonic.
For the adults in the family: Pour 18 ounces #SmugNun, 6 ounces simple syrup, and 2 dozen dashes orange bitters into a pitcher or carafe and refrigerate. Serve over ice—about 2 ounces per glass, topping off with 4 ounces tonic. Put on Sister Sledge and dance like only your family’s watching.
