4 cups peeled, chopped peaches
1/4 cup honey
2 tablespoons fresh lemon juice
3 tablespoons Smuggling Nun Irish Poitín
Put peaches, honey, lemon juice, and poitín in a blender and pulse just enough to leave some small chunks of fruit. Pour into popsicle mold and place in freezer for 30 minutes before inserting sticks. Freeze until firm, about 6 hours. Note: don’t try increasing the ratio of alcohol, as the popsicles won’t freeze.
