1/2 ounce Demerara syrup*
Organic heavy cream, whipped and refrigerated until use
1 1/2 ounces Smuggling Nun Irish Poitín
4 ounces hot, fresh coffee
Fill a coffee glass or mug with hot water and drain. Put 1/2 ounce of syrup in the warm glass, layer the whiskey next, and then the coffee. Using a spoon, float 3/4 to 1 inch of cream onto the top. Dust with nutmeg
*Demerara syrup: Combine 1/2 cup water and 1 cup Demerara sugar in a pan. Warm over low heat until dissolved, cool and store refrigerated.
